Since most of us are hunkering down with our families I can't think of anything more comforting than Walt's Chili. I have gone into the Picturing Disney archives to bring you all a little taste of "HOME"

Do you love the food at Disney Parks?
After coming home from my first Disneyland trip many years ago I was craving something classic Disney. With fall on the horizon "Walt’s Own Chili" recipe sounded fabulous!
This dish never disappoints. I used the Cooking with Mickey and the Disney Chefs cookbooks as my base. I made the recipe more personal by adding extra spices to suit my taste.

Ingredients:
1 lb. ground beef3/4 lb. beef stew meat
1 small onion- diced
1 medium green pepper-diced
4 cloves garlic- minced
1⁄2 cup oil (vegetable or olive)
1 cup chopped celery
1 tablespoon ground cumin
1 tablespoon onion powder
1/2 teaspoon chili powder
1/2 teaspoon cayenne pepper
1 tsp. paprika
1 plum tomato- diced (for garnish)
1 large 28 ounce can diced tomatoes
1 1/2 cups water
1 14.5 ounce can pinto beans- rinsed/drained/dried overnight
Salt to taste
*Garnish--> Sour Cream, Shredded Cheddar
Cheese, Diced Tomatoes
Directions:
Makes approximately six servings
- Add beans to pan and cover with water (2 inches over beans).
- Simmer with onions until tender (2 hours).
- Heat oil and sautee garlic.
- Brown beef with celery until lightly browned.
- Add remaining ingredients.
- Simmer for 1 hour.
- Once beans are tender, add sauce to chili base and simmer together for 1⁄2 hour.
